Creamy Parmesan Herb Chicken

3 lbs chicken
1tbs garlic
1 and 1/2 cup parmesan cheese
parsley
salt and pepper
1 can mushrooms
2 cans cream of chicken soup
1 can cream of mushroom
1 cup milk
1 cup chicken stock
2lbs Farfalle pasta

Start boiling your water for the pasta first, get that started while you get everything else ready.

Cut the chicken in bite sized pieces and cook with garlic. After chicken is cooked through add the cans of soup and mushrooms. Stir in the milk/chicken stock as needed to thin the sauce. The thinner the sauce the more the pasta will absorb it. Add the parsely to taste as well as the salt and pepper. After everything is mixed in well add grated parmesan cheese to your sauce.

The pasta should be done as your sauce and chicken is finishing and mix together.

Kelbasa and Potatos

I made Kelbasa. Normally i try to fry the potatos in with the meat and I get frusterated and it never turns out the way I wanted it. This time I cut the potatos in small pieces and put them on a pan with olive oil and montreal steak seasoning. I baked them at 425 untill they got soft.

I put the kelbasa in a pan and browned it up and threw in some onions and green peppers. everything was donee about the same time. It was super good, easy and I didn't get frusterated!

I also made a Black Forrest Dump Cake. Cherry pie filling and chocolate cake mix this time. Everyone loved it!

Chicken Tortellini Stew

I havn't tried this one yet but it looks soooooo yummy and purrfect for the cold!

1 tbsp. cornstarch
1 tbsp. water
2 tbsp. vegetable oil
3/4 lb. skinless, boneless chicken breast, cut into cubes
1 cup frozen sliced carrot
1 cup frozen cut green beans
3/4 cup chopped onion
6 cups chicken broth
1 cup dried cheese-filled tortellini
2 tbsp. chopped fresh parsley (optional)

Stir the cornstarch and water in a small cup until smooth. Set the mixture aside.

Heat 1 tablespoon of the oil in a 6-quart saucepot over medium-high heat. Add the chicken and cook until it's well browned, stirring often. Remove the chicken.

Add the remaining oil to the saucepot. Add the carrots, beans and onions. Cook over medium-heat until the vegetables are tender-crisp.

Stir in the broth. Heat to a boil. Add the tortellini and parsley, if desired. Cook for 10 minutes or until the tortellini is tender. Return the chicken to the saucepot and heat through.

Stir the cornstarch mixture and stir it into the saucepot. Cook and stir until the mixture boils and thickens slightly

this serves 6, but you know in my family i'm going to have to quadruple it!

You can also just not add the cornstarch and keep it more as a soup, if your not into stews.

15 Minute Dinner

Yesterday I made dinner quick. I made pork chops and greenbean cassarole.

For the pork chops I just put montreal steak season on them (which BTW is good on ANYTHING!) and fried them in a pan.

Greenbean cassarole

2 cans greenbeans
1 can cream of mushroom soup
3/4 cup milk
1/2 cup french fried onions

mix together and bake for apox 30 mins

top with a little more french fried onions and bake for a few more mins.
